MOUSSAKA

The most famous Greek dish!!!
It is no accident that it is so widely known and popular. An excellent choice for the whole family. Apart from its exceptionally unique taste, it is also high in nutritional value. !!!

Ingredients: (serves 4)
100g oil
60g onion
400g mince meat
300g tomato juice
600g aubergines
600g potatoes
800g béchamel
salt
pepper
allspice

Method:
Heat oil and sauté the onion and mince meat. Add the tomato juice and spices, and leave to simmer. Slice the aubergines and potatoes, fry them and set them aside to allow the excess oil to drain. Prepare the béchamel sauce (using your favourite recipe). In a baking pan, alternate layers of vegetables with the mince meat, and finally top with the béchamel sauce. Bake at 160 degrees C for 30 minutes..



PASTICHIO

Rich, filling and impressive!!!
It is one of the basic Greek family dishes, quick and easy to prepare.!!!

Ingredients: (serves 4)
100g oil
60g onion
400g mince meat
300g tomato juice
500g pasta
800g béchamel sauce
salt
pepper
allspice

Method:
Heat the oil and sauté the onion and mince meat. Add the tomato juice and spices and leave to simmer. Add a tablespoon of olive oil to boiling salted water, and add the pasta. When the pasta is ready, strain and mix about a third of the mince meat with a third of the béchamel sauce. Lay the mixture in a pan and add the remaining mince meat. Cover with the remaining béchamel sauce. Bake at 160 degrees C for 30 minutes.



SPETSOFAI

For connoisseurs!
What flavour, what an aroma, what pleasure!!

Ingredients : (serves 4)
600g sausages
1kg green peppers
300g red peppers
150g onion
60g tomato juice
oil
salt
pepper
wine

Method:
Slice the sausages and blanch to eliminate some of the fat. Cut the peppers into big pieces, fry and set aside to drain. In a pot, heat oil and sauté the onion, adding the tomato, wine, herbs and wine. Leave to simmer. When the sauce thickens, add the peppers and sausages and simmer for 5-6 minutes.



BRIAM

A traditional summer dish!!!
An ideal meal for any time of day, served hot or cold with a glass of white wine!!!

Ingredients: (serves 4)
500g aubergines
600g courgettes
500g potatoes
100g green peppers
100g red peppers
150g onion
100g carrots
450g tomato juice
parsley
olive oil
salt
garlic

Method:
Cut the potatoes, courgettes, aubergines, peppers and carrots into cubes. Fry them and set aside to drain. In a pot, heat oil and sauté the onion, adding the tomato and herbs, and leave the sauce to simmer. Place all the vegetables into a pan, pour the slightly thickened sauce over the top and bake in the oven for 20 minutes.



FAVA

Reminiscent of the Greek islands !!!
High in nutritional value and exceptional taste!!!

Ingredients: (serves 4)
2 litres water
400g fava
150g onion
200g olive oil
Salt
parsley
lemon

Method:
Place the water, fava and onion in a pot and boil for about 25 minutes, until water is absorbed. Puree in a blender and add olive oil, salt and lemon. Serve hot or cold with freshly chopped parsley.
